WILMINGTON – Tamashii Drinks - Sushi - Spoons opened in August 2012. Chef Mark Scharaga developed the restaurant idea, which is based upon providing the best locally sourced ingredients (when available) with a vision for sushi and a kitchen menu that honors the “soul” or Tamashii of the ingredients.
Chef Mark trained in Los Angeles and Chef Jonathan White joined the team as an owner partner in June of 2012. He has worked in a variety of restaurants from Seattle to Philadelphia and obtained his culinary degree in Seattle, WA. His unique twists on Asian cuisine are a large part of the kitchen menu at Tamashii.
Chef Mark has worked in two local restaurants, Yosake in 2007 and Cattle Barn in Shallotte, but primarily is known for catering sushi and providing nyotaimori body sushi for upscale clients across the United States.
Part of their goal is to educate their guests about sustainability. The entire menu is designed around sustainability. They also want to take you on a culinary journey, from the time you enter the restaurant. They hope in creating a great dining experience whether you enjoy sushi or prefer an entrée form the kitchen menu.
The restaurant offers an innovative Asian influenced kitchen menu which includes barbecue ribs, steak and seafood. The sushi menu brings an eclectic look at sushi with ingredients that include things like bacon, charred pineapple, and mango. The emphasis is purely on the fish, not sauces or cream cheese like many American style sushi restaurants offer.
The categories that you can find on the menu are Soup or Salads, Beginnings, Ceviche, Poke, Tartare, Izakaya Plates, Noodles, Sashimi or Sushi and Desserts. For the sashimi or sushi there is the traditional bar fare, the simple Hosomaki rolls, fusion rolls and standard rolls. They provide an amazing dining experience with a terrific wine, beer and sake list. They are a great location for the girls’ night out, birthdays and anniversaries. They also offer catering and takeout. Monday nights they offer live music for your entertainment while you are dining.
